If you are playing friendly matches then you don't earn any experience (SPP) so can't level up players. To earn SPP you need to play a 'competitive' match. To do this vs your friend you can create a league for just the 2 of you if you wish.
As to playing vs Orcs, Orcs are often recommended as the most noob friendly team. They have high armour, and can start with 4 Strength 4 players, 4 Block players, and even a Str 5 player in the troll if they want. They are quite cheaply priced, and have no huge weaknesses so are an excellent team for learning the game.
My favourite team to beat a rookie Orc team would be Khemri, but they are quite difficult to play if you are new to the game. Undead may be a better bet, or Dwarves, though I struggle with both. Necromantic might be a good shout though they really need a few skills to get going. Elves give you the ability to keep your players away from the bashier Orcs due to their superior agility and movement, and they also have the ability to move the ball around to take advantage of the slower Orcs. Just remember not to get in a blocking war though because your weaker, less armoured, players will suffer. Or you can always go Orcs too yourself but I find mirror matches a bit dull.
Any team can beat Orcs if you are a better coach and if you get good dice. Against a good Orc coach and without good dice the Human type teams will struggle.

2) Again strong team, recommended for new coaches (personally I can't play them at all but that is just me!)
3) No idea, most people here are PC players
4) League play is progressive, so you start with a team typically at 1000 TV but you gain SPP and skills after matches so that TV increases.
